Chef Masa began his training to become a sushi chef in Japan. The rigorous process of becoming a fully-fledged sushi chef requires a great deal of skill and perseverance. Years of training and experience led Masa to become the head chef at one of the top sushi restaurants in Japan.
In 2005, during a time when sushi was emerging on the global culinary scene, Masa relocated to Vietnam to further develop his career. Fascinated by the idea of taking the tradition of sushi abroad, he chose England as his next challenge. In London, where tradition and avant-garde culture mingle, Masa's professional skills were quickly recognised, and he went on to work at several top Japanese restaurants in the city. Notably, he spent two years at Nobu Restaurant, where he further honed his skills.
Fifteen years after moving to the UK, Masa’s dedication and passion for sushi and Japanese cuisine have never wavered.
